For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 1 1/2 cups diced apples (peeled and cored)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Mix in sour cream.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in diced apples.
  5. In another bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth.
  6. Spread half the cake batter into the prepared pan. Spoon cream cheese mixture over the batter, then top with remaining batter. Swirl lightly with a knife.
  7. Sprinkle cinnamon on top. Bake for 45-50 minutes or until a toothpick comes out clean.
  8. Cool in pan for 15 minutes before removing. Serve warm or at room temperature.
