For the Crust:
- For the oatmeal base:
- 2 cups old-fashioned rolled oats
- 1 tsp baking powder
- 1.5 tsp ground cinnamon
- 1/4 tsp salt
- 1 large egg
- 1.5 cups milk (any kind)
- 1/4 cup maple syrup
- 2 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
- For the apple mixture:
- 2 medium apples, peeled and diced (about 2 cups)
- 1 tbsp lemon juice
- 1 tbsp brown sugar
- 1/2 tsp cinnamon
- For topping (optional):
- 1/4 cup chopped walnuts
- Additional maple syrup for drizzling
Instructions
1. Prepare the Crust:
- 1. Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish.
- 2. In a large bowl, mix oats, baking powder, cinnamon, and salt.
- 3. In another bowl, whisk egg, milk, maple syrup, melted butter, and vanilla.
- 4. Combine wet and dry ingredients, stirring until just mixed.
- 5. Toss diced apples with lemon juice, brown sugar, and cinnamon in a separate bowl.
- 6. Spread half the oat mixture in prepared dish. Top with apple mixture, then remaining oats.
- 7. Sprinkle with walnuts if using. Bake 35-40 minutes until golden and set.
- 8. Let cool 5 minutes before serving. Drizzle with extra maple syrup if desired.
Notes
• Store leftovers refrigerated for up to 5 days. Reheat with a splash of milk.
• For vegan version: use flax egg, plant milk, and coconut oil.
• Can substitute pears for apples in fall months.
