Description

A warm and comforting baked oatmeal loaded with fresh apples, cinnamon, and a touch of maple syrup. Perfect for meal prep or a cozy weekend breakfast.

For the Crust:

  • For the oatmeal base:
  • 2 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • 1.5 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 large egg
  • 1.5 cups milk (any kind)
  • 1/4 cup maple syrup
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • For the apple mixture:
  • 2 medium apples, peeled and diced (about 2 cups)
  • 1 tbsp lemon juice
  • 1 tbsp brown sugar
  • 1/2 tsp cinnamon
  • For topping (optional):
  • 1/4 cup chopped walnuts
  • Additional maple syrup for drizzling

Instructions

1. Prepare the Crust:

  1. 1. Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish.
  2. 2. In a large bowl, mix oats, baking powder, cinnamon, and salt.
  3. 3. In another bowl, whisk egg, milk, maple syrup, melted butter, and vanilla.
  4. 4. Combine wet and dry ingredients, stirring until just mixed.
  5. 5. Toss diced apples with lemon juice, brown sugar, and cinnamon in a separate bowl.
  6. 6. Spread half the oat mixture in prepared dish. Top with apple mixture, then remaining oats.
  7. 7. Sprinkle with walnuts if using. Bake 35-40 minutes until golden and set.
  8. 8. Let cool 5 minutes before serving. Drizzle with extra maple syrup if desired.

Notes

• Store leftovers refrigerated for up to 5 days. Reheat with a splash of milk.
• For vegan version: use flax egg, plant milk, and coconut oil.
• Can substitute pears for apples in fall months.
