For the Crust:

- 1 1/2 cups old-fashioned rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- For the apple filling:
- 2 medium apples, peeled and diced
- 2 tablespoons brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
1. Prepare the Crust:
- Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mix together the oats, flour, brown sugar, salt, and cinnamon for the crust and topping.
- Add the melted butter and stir until the mixture is crumbly but holds together when pressed.
- Reserve 1/2 cup of the mixture for the topping. Press the remaining mixture firmly into the bottom of the prepared pan.
- In a medium saucepan, combine the diced apples, brown sugar, lemon juice, cinnamon, and nutmeg. Cook over medium heat for 5 minutes, stirring occasionally.
- In a small bowl, mix the cornstarch and water until smooth. Add to the apple mixture and cook for another 2-3 minutes until thickened. Remove from heat.
- Spread the apple filling evenly over the crust. Sprinkle the reserved oat mixture on top.
- Bake for 25-30 minutes, or until the topping is golden brown.
- Allow to cool completely in the pan before cutting into bars.
Notes
For extra flavor, add a pinch of cloves or allspice to the apple filling. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
