- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsweetened applesauce
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- For the glaze (optional):
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/4 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mix oats, flour, brown sugar, cinnamon, baking soda, and salt.
- In another bowl, whisk applesauce, melted coconut oil, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until well combined.
- Press the mixture firmly into the prepared pan, smoothing the top.
- Bake for 20-25 minutes or until edges are golden brown.
- Let cool completely in the pan before slicing into bars.
- For the glaze (optional): Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled bars.
Notes
Store bars in an airtight container for up to 5 days. For a vegan version, use maple syrup instead of honey and almond milk in the glaze. Bars can be frozen for up to 2 months.
