For the Crust:

  • 1 lb white fish fillets (such as cod or tilapia)
  • 1 can (14 oz) coconut milk
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1 bunch cilantro, chopped
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, and bell pepper. Sauté until softened.
  2. Add tomatoes, paprika, salt, and pepper. Cook for 5 minutes until tomatoes break down.
  3. Pour in coconut milk and bring to a gentle simmer. Add fish fillets and lime juice.
  4. Cover and cook for 10-12 minutes until fish is tender and cooked through.
  5. Stir in chopped cilantro and adjust seasoning if needed. Serve hot with rice or bread.
