A comforting and flavorful Chinese noodle soup with a rich broth, fresh vegetables, and tender noodles.

For the Crust:
- 8 oz Chinese wheat noodles
- 4 cups chicken or vegetable broth
- 2 cloves garlic, minced
- 1 inch ginger, sliced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 cup bok choy, chopped
- 1 carrot, julienned
- 2 green onions, sliced
- 1 tsp white pepper
- 1 tsp chili oil (optional)
Instructions
1. Prepare the Crust:
- In a pot, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
- Pour in the broth and bring to a boil. Add soy sauce and white pepper, then reduce heat to simmer for 10 minutes.
- Add the noodles and cook according to package instructions (about 3-5 minutes).
- Stir in bok choy and carrot, simmer for another 2 minutes until vegetables are tender.
- Ladle the soup into bowls, garnish with green onions and drizzle with chili oil if desired.
