Chinese Noodle Soup

A comforting and flavorful Chinese noodle soup with a rich broth, fresh vegetables, and tender noodles.

For the Crust:

  • 8 oz Chinese wheat noodles
  • 4 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 cup bok choy, chopped
  • 1 carrot, julienned
  • 2 green onions, sliced
  • 1 tsp white pepper
  • 1 tsp chili oil (optional)

Instructions

1. Prepare the Crust:

  1. In a pot, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
  2. Pour in the broth and bring to a boil. Add soy sauce and white pepper, then reduce heat to simmer for 10 minutes.
  3. Add the noodles and cook according to package instructions (about 3-5 minutes).
  4. Stir in bok choy and carrot, simmer for another 2 minutes until vegetables are tender.
  5. Ladle the soup into bowls, garnish with green onions and drizzle with chili oil if desired.

Notes

You can customize the seasonings to taste.
