For the Crust:
- 1 cup long-grain white rice
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for 1 more minute.
- Stir in rice and cook for 2-3 minutes until lightly toasted.
- Add diced tomatoes, chicken broth, cumin, paprika, salt, and black pepper. Stir well.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is tender and liquid is absorbed.
- Remove from heat and let stand covered for 5 minutes. Fluff with a fork and stir in chopped cilantro before serving.
