A flavorful and easy-to-make Spanish rice dish with tomatoes, onions, and spices.

For the Crust:

  • 1 cup long-grain white rice
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for 1 more minute.
  3. Stir in rice and cook for 2-3 minutes until lightly toasted.
  4. Add diced tomatoes, chicken broth, cumin, paprika, salt, and black pepper. Stir well.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is tender and liquid is absorbed.
  6. Remove from heat and let stand covered for 5 minutes. Fluff with a fork and stir in chopped cilantro before serving.

Notes

You can customize the seasonings to taste.
