Description
A flavorful Vietnamese noodle soup made with beef broth, herbs, and spices.
Ingredients

- 2 onions, halved
- 4 inches ginger, halved lengthwise
- 5 star anise
- 2 cinnamon sticks
- 1 teaspoon whole cloves
- 1 teaspoon coriander seeds
- 6 cups beef broth
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 8 oz rice noodles
- 1 lb beef sirloin, thinly sliced
- Fresh herbs: cilantro, basil, and mint
- Bean sprouts, lime wedges, and chili peppers for garnish
Instructions
- Char the onions and ginger over an open flame or under a broiler for 5 minutes.
- In a large pot, toast the star anise, cinnamon, cloves, and coriander seeds for 2-3 minutes.
- Add the charred onions, ginger, beef broth, fish sauce, and sugar to the pot. Bring to a boil, then simmer for 1 hour.
- Cook the rice noodles according to package instructions and divide into bowls.
- Strain the broth and pour over the noodles. Add sliced beef; it will cook in the hot broth.
- Garnish with fresh herbs, bean sprouts, lime, and chili.
Notes
For a vegetarian version, substitute beef broth with vegetable broth and omit the beef.
