Description

A flavorful Vietnamese noodle soup made with beef broth, herbs, and spices.


Ingredients

  • 2 onions, halved
  • 4 inches ginger, halved lengthwise
  • 5 star anise
  • 2 cinnamon sticks
  • 1 teaspoon whole cloves
  • 1 teaspoon coriander seeds
  • 6 cups beef broth
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 8 oz rice noodles
  • 1 lb beef sirloin, thinly sliced
  • Fresh herbs: cilantro, basil, and mint
  • Bean sprouts, lime wedges, and chili peppers for garnish

Instructions

  1. Char the onions and ginger over an open flame or under a broiler for 5 minutes.
  2. In a large pot, toast the star anise, cinnamon, cloves, and coriander seeds for 2-3 minutes.
  3. Add the charred onions, ginger, beef broth, fish sauce, and sugar to the pot. Bring to a boil, then simmer for 1 hour.
  4. Cook the rice noodles according to package instructions and divide into bowls.
  5. Strain the broth and pour over the noodles. Add sliced beef; it will cook in the hot broth.
  6. Garnish with fresh herbs, bean sprouts, lime, and chili.

Notes

For a vegetarian version, substitute beef broth with vegetable broth and omit the beef.
