- 2 slices of whole-grain bread
- 1 ripe avocado, halved and pitted
- 2 large eggs
- 4 oz smoked salmon
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- Toast the bread slices until golden brown.
- In a bowl, mash the avocado with lemon juice, salt, and pepper.
- Poach the eggs in simmering water for 3-4 minutes until the whites are set.
- Spread the mashed avocado on the toasted bread.
- Top with smoked salmon and a poached egg.
- Garnish with fresh dill and serve immediately.
Notes
For a vegetarian version, omit the smoked salmon and add cherry tomatoes.
