Description

A delicious and nutritious breakfast featuring creamy avocado, a perfectly poached egg, and smoked salmon on toasted bread.


Ingredients

  • 2 slices of whole-grain bread
  • 1 ripe avocado, halved and pitted
  • 2 large eggs
  • 4 oz smoked salmon
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. Toast the bread slices until golden brown.
  2. In a bowl, mash the avocado with lemon juice, salt, and pepper.
  3. Poach the eggs in simmering water for 3-4 minutes until the whites are set.
  4. Spread the mashed avocado on the toasted bread.
  5. Top with smoked salmon and a poached egg.
  6. Garnish with fresh dill and serve immediately.

Notes

For a vegetarian version, omit the smoked salmon and add cherry tomatoes.
