  • 1/4 tsp salt
  • 1 3/4 cups milk (dairy or plant-based)
  • 1/4 cup maple syrup
  • 1 large egg
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • For the apple mixture:
  • 2 medium apples, peeled and diced
  • 1 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • For topping (optional):
  • 1/4 cup chopped walnuts or pecans
  • Additional maple syrup for drizzling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish.
  2. In a large bowl, mix together oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together milk, maple syrup, egg, melted butter, and vanilla.
  4. Pour wet ingredients into dry ingredients and stir until combined.
  5. In a separate bowl, toss diced apples with brown sugar and cinnamon.
  6. Spread half of the oat mixture into the prepared baking dish.
  7. Layer the apple mixture evenly over the oats.
  8. Top with remaining oat mixture, spreading gently to cover apples.
  9. Sprinkle with chopped nuts if using.
  10. Bake for 35-40 minutes until golden and set.
  11. Let cool for 5 minutes before serving. Drizzle with additional maple syrup if desired.

Notes

For best results, use firm apples like Honeycrisp or Granny Smith. Leftovers can be refrigerated for up to 3 days and reheated with a splash of milk. For a dairy-free version, use coconut oil and almond milk.
