Description

These muffins combine ripe bananas, crunchy pecans, and a gooey caramel topping for a delightful treat.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1/2 cup chopped pecans
  • 1/2 cup caramel sauce
  • 1/2 cup sugar
  • 1/4 cup butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the mashed bananas, sugar, melted butter, and egg until well combined.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the chopped pecans.
  6. Spoon the batter into the muffin liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Remove from oven and let cool for 5 minutes, then drizzle with caramel sauce.

Notes

For a nut-free version, substitute pecans with chocolate chips. Store in an airtight container for up to 3 days.
