For the Crust:
- For the oatmeal base:
- 2 cups old-fashioned rolled oats
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp salt
- For the wet ingredients:
- 2 large ripe bananas, mashed
- 1 3/4 cups milk (dairy or plant-based)
- 1 large egg
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- For toppings (optional):
- 1 banana, sliced
- 2 tbsp chopped walnuts
- 1 tbsp chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 375Β°F (190Β°C) and grease an 8Γ8 baking dish.
- In a large bowl, mix dry ingredients: oats, baking powder, cinnamon, and salt.
- In another bowl, whisk mashed bananas, milk, egg, maple syrup, and vanilla until smooth.
- Pour wet ingredients into dry ingredients and stir until fully combined.
- Transfer mixture to prepared baking dish. Top with banana slices, walnuts, and chocolate chips if using.
- Bake for 35-40 minutes until golden brown and set in the center.
- Let cool for 5 minutes before serving. Drizzle with extra maple syrup if desired.
Notes
Store leftovers covered in the refrigerator for up to 5 days. Reheat in microwave with a splash of milk. For vegan version, use flax egg and plant-based milk.
