For the Crust:
- For dry ingredients:
- 1 1/2 cups old-fashioned rolled oats
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- For wet ingredients:
- 2 large ripe bananas, mashed (about 3/4 cup)
- 1/2 cup unsalted butter, melted and cooled
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- For mix-ins:
- 3/4 cup semi-sweet chocolate chips
- 1/4 cup chopped walnuts (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together oats, flour, baking soda, salt, and cinnamon.
- In a large bowl, mix mashed bananas, melted butter, brown sugar, egg, and vanilla until smooth.
- Gradually stir dry ingredients into wet ingredients until just combined.
- Fold in chocolate chips and walnuts (if using).
- Drop 2-tablespoon portions of dough onto prepared sheets, spacing 2 inches apart.
- Bake for 12-14 minutes until edges are golden but centers are still soft.
- Let cool on sheets for 5 minutes, then transfer to wire racks to cool completely.
Notes
Store in an airtight container for up to 3 days. For crispier cookies, flatten dough slightly before baking. Overripe bananas with brown spots yield the best flavor.
