For the Crust:
- For the cookies:
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/4 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 tsp cinnamon
- 1/4 tsp vanilla extract
- For add-ins (optional):
- 1/4 cup dark chocolate chips
- 2 tbsp chopped walnuts
- 1 tbsp chia seeds
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mash the bananas until smooth.
- Add almond butter, honey/maple syrup, cinnamon, and vanilla extract. Mix well.
- Stir in rolled oats until fully combined. Fold in optional add-ins if using.
- Scoop tablespoon-sized portions onto the baking sheet, flattening slightly with a spoon.
- Bake for 12-15 minutes until edges are golden. Let cool for 5 minutes before transferring.
Notes
Store in an airtight container for up to 5 days. For crispier cookies, bake an extra 2-3 minutes. Substitute peanut butter if almond butter isn’t available.
