These wholesome Banana Peanut Butter Oatmeal Bars are a perfect grab-and-go breakfast or snack. Packed with natural sweetness from bananas and protein from peanut butter, they’re both delicious and nutritious.

  • 2 cups rolled oats
  • 3 ripe bananas, mashed
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • For the Topping (Optional):
  • 2 tbsp peanut butter, melted
  • 1 tbsp honey
  • 1/4 cup chopped peanuts

Instructions

1. Prepare the Crust:

  1. 1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. 2. In a large bowl, combine the mashed bananas, peanut butter, honey, vanilla extract, cinnamon, and salt. Mix until smooth.
  3. 3. Stir in the rolled oats until everything is well combined and the oats are fully coated.
  4. 4. Transfer the mixture to the prepared baking pan, pressing it down firmly and evenly with a spatula or your hands.
  5. 5. Bake for 20-25 minutes, or until the edges are golden brown.
  6. 6. Let the bars cool completely in the pan before slicing. If adding the optional topping, drizzle with melted peanut butter and honey, then sprinkle with chopped peanuts.
  7. 7. Cut into bars and store in an airtight container for up to 5 days, or freeze for longer storage.

Notes

For a vegan version, substitute the honey with maple syrup. You can also add chocolate chips or dried fruit for extra flavor. These bars are naturally gluten-free if you use certified gluten-free oats.
