- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 1 bag (13 oz) tortilla chips, crushed
- 1 cup sour cream
- Optional toppings: jalapeños, olives
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef, onion, and garlic over medium heat until beef is browned; drain fat.
- Stir in black beans, taco seasoning, and salsa; simmer for 5 minutes.
- In a greased baking dish, layer crushed tortilla chips, beef mixture, and shredded cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Top with sour cream and optional toppings before serving.
Notes
For a spicier version, add chopped jalapeños to the beef mixture. This casserole can be prepared ahead and refrigerated.
