- 1 pound ground beef
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 package (9 oz) refrigerated cheese tortellini
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up with a spoon.
- Add chopped onion and garlic to the pot and sauté until softened, about 3-4 minutes.
- Stir in beef broth, diced tomatoes, carrots, celery, and Italian seasoning. Bring to a boil.
- Reduce heat and simmer for 15-20 minutes until vegetables are tender.
- Add tortellini and cook according to package instructions, about 7-9 minutes.
- Season with salt and pepper to taste. Garnish with fresh parsley before serving.
Notes
For a vegetarian version, substitute ground beef with plant-based meat alternative.
