Description

A hearty and comforting soup featuring tender beef, cheesy tortellini, and fresh vegetables in a flavorful broth.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 package (9 oz) refrigerated cheese tortellini
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up with a spoon.
  2. Add chopped onion and garlic to the pot and sauté until softened, about 3-4 minutes.
  3. Stir in beef broth, diced tomatoes, carrots, celery, and Italian seasoning. Bring to a boil.
  4. Reduce heat and simmer for 15-20 minutes until vegetables are tender.
  5. Add tortellini and cook according to package instructions, about 7-9 minutes.
  6. Season with salt and pepper to taste. Garnish with fresh parsley before serving.

Notes

For a vegetarian version, substitute ground beef with plant-based meat alternative.
