For the Crust:

  • For the base and topping:
  • 2 cups rolled oats (gluten-free if needed)
  • 1 cup almond flour
  • 1/4 cup maple syrup or honey
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • For the berry filling:
  • 2 cups mixed berries (fresh or frozen)
  • 1 tbsp chia seeds
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup (optional)

Instructions

1. Prepare the Crust:

  1. 1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. 2. In a large bowl, mix all base ingredients until well combined and crumbly.
  3. 3. Reserve 1/2 cup of the mixture for topping, then press the rest firmly into the prepared pan.
  4. 4. In a separate bowl, gently mix berry filling ingredients. Let sit for 5 minutes to thicken.
  5. 5. Spread berry mixture evenly over the base, then sprinkle with reserved topping.
  6. 6. Bake for 30-35 minutes until golden brown. Cool completely before slicing.

Notes

Store in an airtight container for up to 5 days. For vegan version, use maple syrup instead of honey. Can substitute any berries you prefer. Bars will firm up as they cool.
