For the Crust:
- For the base and topping:
- 2 cups gluten-free rolled oats
- 1 cup almond flour
- 1/2 cup coconut sugar
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 cup coconut oil (melted)
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- For the berry filling:
- 2 cups mixed berries (fresh or frozen)
- 1 tbsp chia seeds
- 1 tbsp maple syrup
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
Instructions
1. Prepare the Crust:
- 1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- 2. In a large bowl, mix together oats, almond flour, coconut sugar, salt, and cinnamon for the base.
- 3. Add melted coconut oil, maple syrup, and vanilla extract. Stir until well combined and crumbly.
- 4. Press 2/3 of the mixture firmly into the prepared pan to form the base. Set aside remaining mixture for topping.
- 5. In a saucepan, combine berries, chia seeds, maple syrup, lemon juice, and vanilla. Cook over medium heat for 5-7 minutes until berries break down and mixture thickens.
- 6. Spread berry filling evenly over the base, then sprinkle remaining oat mixture on top.
- 7. Bake for 25-30 minutes until golden brown. Let cool completely before slicing into bars.
Notes
Store in an airtight container for up to 5 days or freeze for longer storage. For firmer bars, refrigerate before serving. Substitute any berries you prefer – blueberries, raspberries or strawberries all work well.
