Crispy on the outside, creamy on the inside, these air fryer twice baked potatoes are a delicious and easy side dish.

For the Crust:
- 4 medium russet potatoes
- 1/4 cup sour cream
- 1/4 cup shredded cheddar cheese
- 2 tablespoons butter
- 2 tablespoons milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped chives (optional)
Instructions
1. Prepare the Crust:
- Preheat air fryer to 400°F (200°C). Pierce potatoes with a fork and air fry for 30-35 minutes until tender.
- Let potatoes cool slightly, then cut in half lengthwise. Scoop out the flesh, leaving a 1/4-inch shell.
- In a bowl, mash the potato flesh with sour cream, cheese, butter, milk, garlic powder, salt, and pepper until smooth.
- Spoon the mixture back into the potato shells. Return to air fryer and cook at 375°F (190°C) for 8-10 minutes until golden.
- Garnish with chopped chives if desired and serve warm.
