Air Fryer Twice Baked Potatoes

Description

Crispy on the outside, creamy on the inside, these air fryer twice baked potatoes are a delicious and easy side dish.

For the Crust:

  • 4 medium russet potatoes
  • 1/4 cup sour cream
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped chives (optional)

Instructions

1. Prepare the Crust:

  1. Preheat air fryer to 400°F (200°C). Pierce potatoes with a fork and air fry for 30-35 minutes until tender.
  2. Let potatoes cool slightly, then cut in half lengthwise. Scoop out the flesh, leaving a 1/4-inch shell.
  3. In a bowl, mash the potato flesh with sour cream, cheese, butter, milk, garlic powder, salt, and pepper until smooth.
  4. Spoon the mixture back into the potato shells. Return to air fryer and cook at 375°F (190°C) for 8-10 minutes until golden.
  5. Garnish with chopped chives if desired and serve warm.

Notes

You can customize the seasonings to taste.
