For the Crust:
- 2 cups almond flour
- 1/2 cup coconut sugar
- 3 large eggs
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 medium apples, peeled and diced
- 1 tbsp lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, whisk together almond flour, coconut sugar, cinnamon, baking soda, and salt.
- In another bowl, beat eggs, then mix in melted coconut oil and vanilla extract.
- Combine wet and dry ingredients, then fold in diced apples and lemon juice.
- Pour batter into the prepared pan and bake for 30 minutes or until a toothpick comes out clean.
- Let cool before slicing and serving.
