For the Crust:

  • 2 cups almond flour
  • 1/2 cup coconut sugar
  • 3 large eggs
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 medium apples, peeled and diced
  • 1 tbsp lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together almond flour, coconut sugar, cinnamon, baking soda, and salt.
  3. In another bowl, beat eggs, then mix in melted coconut oil and vanilla extract.
  4. Combine wet and dry ingredients, then fold in diced apples and lemon juice.
  5. Pour batter into the prepared pan and bake for 30 minutes or until a toothpick comes out clean.
  6. Let cool before slicing and serving.
