For the Crust:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 2 cups peeled and diced apples
- 1/2 cup chopped pecans
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons cold butter, cubed
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C). Grease a 9Γ5 inch loaf pan.
- Whisk together flour, baking soda, and salt in a medium bowl. Set aside.
- Cream together softened butter and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in milk and vanilla.
- Gradually mix dry ingredients into wet ingredients until just combined. Fold in diced apples.
- In a small bowl, combine chopped pecans, granulated sugar, cinnamon, and cold cubed butter to make the crunch topping.
- Pour batter into prepared pan and sprinkle evenly with cinnamon pecan crunch mixture.
- Bake for 50-60 minutes or until a toothpick inserted into center comes out clean. Cool in pan for 15 minutes before transferring to wire rack.
