For the Crust:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apples
  • 1/2 cup chopped pecans
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cold butter, cubed

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9Γ—5 inch loaf pan.
  2. Whisk together flour, baking soda, and salt in a medium bowl. Set aside.
  3. Cream together softened butter and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in milk and vanilla.
  4. Gradually mix dry ingredients into wet ingredients until just combined. Fold in diced apples.
  5. In a small bowl, combine chopped pecans, granulated sugar, cinnamon, and cold cubed butter to make the crunch topping.
  6. Pour batter into prepared pan and sprinkle evenly with cinnamon pecan crunch mixture.
  7. Bake for 50-60 minutes or until a toothpick inserted into center comes out clean. Cool in pan for 15 minutes before transferring to wire rack.
