For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 cup reduced apple cider
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, softened (for filling)
  • 1 1/2 cups powdered sugar
  • 1/2 cup caramel sauce
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F. Line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a bowl. In another bowl, cream butter and sugars until fluffy. Beat in egg, reduced apple cider, and vanilla.
  3. Gradually mix dry ingredients into wet until combined. Drop tablespoon-sized mounds onto baking sheets, spacing 2 inches apart. Bake 10-12 minutes until edges are set. Cool completely.
  4. For filling, beat butter until smooth. Gradually add powdered sugar, then caramel sauce and salt. Beat until light and fluffy.
  5. Spread or pipe filling onto flat side of half the cookies. Top with remaining cookies to form sandwiches.
