For the Crust:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 cup reduced apple cider
- 1 tsp vanilla extract
- 1/2 cup unsalted butter, softened (for filling)
- 1 1/2 cups powdered sugar
- 1/2 cup caramel sauce
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F. Line baking sheets with parchment paper.
- Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a bowl. In another bowl, cream butter and sugars until fluffy. Beat in egg, reduced apple cider, and vanilla.
- Gradually mix dry ingredients into wet until combined. Drop tablespoon-sized mounds onto baking sheets, spacing 2 inches apart. Bake 10-12 minutes until edges are set. Cool completely.
- For filling, beat butter until smooth. Gradually add powdered sugar, then caramel sauce and salt. Beat until light and fluffy.
- Spread or pipe filling onto flat side of half the cookies. Top with remaining cookies to form sandwiches.
