Moist pumpkin muffins filled with tender apple chunks and topped with a crunchy cinnamon streusel.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup finely chopped apple
  • 1/2 cup all-purpose flour (for streusel)
  • 1/4 cup brown sugar (for streusel)
  • 1/4 cup cold butter, cubed (for streusel)
  • 1 tsp cinnamon (for streusel)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F (190Β°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, mix pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  4. Combine wet and dry ingredients, then fold in chopped apples. Do not overmix.
  5. For streusel: mix flour, brown sugar, cinnamon, and cut in cold butter until crumbly.
  6. Fill muffin cups 3/4 full, top generously with streusel, and bake for 20-25 minutes or until a toothpick comes out clean.
