For the Crust:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup finely chopped apple
- 1/2 cup all-purpose flour (for streusel)
- 1/4 cup brown sugar (for streusel)
- 1/4 cup cold butter, cubed (for streusel)
- 1 tsp cinnamon (for streusel)
Instructions
1. Prepare the Crust:
- Preheat oven to 375Β°F (190Β°C) and line a muffin tin with paper liners.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, mix pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
- Combine wet and dry ingredients, then fold in chopped apples. Do not overmix.
- For streusel: mix flour, brown sugar, cinnamon, and cut in cold butter until crumbly.
- Fill muffin cups 3/4 full, top generously with streusel, and bake for 20-25 minutes or until a toothpick comes out clean.
