For the Crust:
- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1/2 cup salsa (mild or medium)
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a skillet over medium heat. Add shrimp, season with garlic powder, salt, and pepper. Cook for 2-3 minutes per side until pink and opaque. Remove from heat and let cool.
- In a large bowl, combine diced avocados, cherry tomatoes, red onion, and cilantro. Gently toss with lime juice to prevent browning.
- Add the cooked shrimp and salsa to the bowl. Mix gently to combine all ingredients. Serve immediately or chill for 30 minutes before serving.
