Banana Bread Mini Muffins

For the Crust:

  • 2 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 pinch salt
  • 1 1/2 cups all-purpose flour

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a mini muffin tin or line with mini muffin cups.
  2. In a large bowl, mix mashed bananas and melted butter. Stir in sugar, egg, and vanilla extract.
  3. Sprinkle baking soda and salt over the mixture and stir. Add flour and mix until just combined.
  4. Spoon batter into prepared mini muffin tin, filling each cup about 3/4 full.
  5. Bake for 12-15 minutes or until a toothpick inserted comes out clean.

Notes

You can customize the seasonings to taste.
