For the Crust:
- 2 cups rolled oats
- 1 cup whole wheat flour
- 1/2 cup honey
- 1/4 cup melted coconut oil
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup fresh blueberries
- 1/4 cup almond milk
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F and line an 8×8 baking pan with parchment paper.
- In a large bowl, mix oats, flour, cinnamon, baking soda, and salt. Stir in honey, coconut oil, and almond milk until combined.
- Gently fold in blueberries. Press mixture evenly into the prepared pan.
- Bake for 25-30 minutes until golden brown. Let cool before cutting into bars.
