For the Crust:
- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg yolk and vanilla extract.
- Gradually mix in flour and salt until just combined. Do not overmix.
- Drop by teaspoonfuls onto prepared baking sheets or pipe through a cookie press for shaped cookies.
- Bake for 10-12 minutes or until edges are lightly golden. Cool on wire racks before serving.
