For the Crust:

  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg yolk and vanilla extract.
  3. Gradually mix in flour and salt until just combined. Do not overmix.
  4. Drop by teaspoonfuls onto prepared baking sheets or pipe through a cookie press for shaped cookies.
  5. Bake for 10-12 minutes or until edges are lightly golden. Cool on wire racks before serving.
