Cajun Potato Soup

A hearty and spicy potato soup with Cajun flavors, perfect for cold days.


Ingredients

For the Crust:

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/2 lb smoked sausage, sliced

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, and bell pepper. Sauté until softened.
  2. Add smoked sausage and cook for 5 minutes until slightly browned.
  3. Stir in potatoes, chicken broth, Cajun seasoning, smoked paprika, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes or until potatoes are tender.
  5. Stir in heavy cream and simmer for an additional 5 minutes. Adjust seasoning if needed.
