A hearty and spicy potato soup with Cajun flavors, perfect for cold days.

For the Crust:
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- 1/2 lb smoked sausage, sliced
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onions, garlic, and bell pepper. Sauté until softened.
- Add smoked sausage and cook for 5 minutes until slightly browned.
- Stir in potatoes, chicken broth, Cajun seasoning, smoked paprika, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes or until potatoes are tender.
- Stir in heavy cream and simmer for an additional 5 minutes. Adjust seasoning if needed.
