Moist and flavorful carrot cake bars with a hint of cinnamon and nutmeg, topped with a creamy frosting.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 4 oz cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan and line with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix melted butter, brown sugar, granulated sugar, eggs, and vanilla until smooth.
  4. Gradually fold the dry ingredients into the wet mixture. Stir in grated carrots and walnuts (if using).
  5. Spread the batter evenly into the prepared pan. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely.
  6. For the frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, mixing until creamy.
  7. Spread frosting over cooled bars. Cut into squares and serve.

You can customize the seasonings to taste.
