Cauliflower Fried Rice with Crispy Tofu

A healthy and flavorful twist on classic fried rice, using cauliflower rice and crispy tofu for a satisfying meal.


Ingredients

For the Crust:

  • 1 medium head cauliflower, grated into rice
  • 14 oz firm tofu, pressed and cubed
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, beaten
  • 1 tbsp olive oil
  • 1 tsp ginger, grated
  • 1/4 tsp red pepper flakes (optional)

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pan over medium heat. Add tofu cubes and cook until golden and crispy, about 8-10 minutes. Remove and set aside.
  2. In the same pan, add sesame oil, garlic, ginger, and onion. Sauté for 2 minutes until fragrant.
  3. Add mixed vegetables and cook for another 3-4 minutes until tender.
  4. Push vegetables to one side of the pan and pour beaten eggs into the empty space. Scramble until cooked, then mix with vegetables.
  5. Add cauliflower rice and soy sauce. Stir-fry for 5-6 minutes until cauliflower is tender.
  6. Return crispy tofu to the pan, add red pepper flakes if using, and toss everything together. Serve hot.

Notes

You can customize the seasonings to taste.
