Flavorful Char Siu Chicken Roast

For the Crust:

  • 1 whole chicken (about 4 lbs)
  • 3 tbsp hoisin sauce
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp Chinese five-spice powder
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp sesame oil
  • 1/2 tsp red food coloring (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Pat the chicken dry with paper towels.
  2. In a bowl, mix hoisin sauce, honey, soy sauce, rice vinegar, five-spice powder, garlic, ginger, sesame oil, and red food coloring (if using) to make the marinade.
  3. Rub the marinade all over the chicken, including under the skin. Let it marinate for at least 1 hour or overnight for best results.
  4. Place the chicken on a roasting rack in a baking dish. Roast for 1 hour or until the internal temperature reaches 165°F (74°C).
  5. Baste the chicken with pan juices every 20 minutes for a glossy finish.
  6. Let the chicken rest for 10 minutes before carving and serving.
