For the Crust:
- 1 whole chicken (about 4 lbs)
- 3 tbsp hoisin sauce
- 2 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp Chinese five-spice powder
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp sesame oil
- 1/2 tsp red food coloring (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Pat the chicken dry with paper towels.
- In a bowl, mix hoisin sauce, honey, soy sauce, rice vinegar, five-spice powder, garlic, ginger, sesame oil, and red food coloring (if using) to make the marinade.
- Rub the marinade all over the chicken, including under the skin. Let it marinate for at least 1 hour or overnight for best results.
- Place the chicken on a roasting rack in a baking dish. Roast for 1 hour or until the internal temperature reaches 165°F (74°C).
- Baste the chicken with pan juices every 20 minutes for a glossy finish.
- Let the chicken rest for 10 minutes before carving and serving.
