For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 packet fajita seasoning
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream (optional)
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a baking dish lightly with olive oil.
  2. Season chicken breasts with fajita seasoning on both sides and place them in the baking dish.
  3. In a skillet, heat olive oil over medium heat. Sauté bell peppers and onion until slightly softened, about 5 minutes.
  4. Spread the sautéed vegetables over the chicken breasts in the baking dish.
  5. Sprinkle both cheeses evenly over the chicken and vegetables.
  6. Bake for 25-30 minutes, or until chicken is cooked through and cheese is bubbly and golden.
  7. Garnish with fresh cilantro and serve with sour cream if desired.
