For the Crust:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 packet fajita seasoning
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream (optional)
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a baking dish lightly with olive oil.
- Season chicken breasts with fajita seasoning on both sides and place them in the baking dish.
- In a skillet, heat olive oil over medium heat. Sauté bell peppers and onion until slightly softened, about 5 minutes.
- Spread the sautéed vegetables over the chicken breasts in the baking dish.
- Sprinkle both cheeses evenly over the chicken and vegetables.
- Bake for 25-30 minutes, or until chicken is cooked through and cheese is bubbly and golden.
- Garnish with fresh cilantro and serve with sour cream if desired.
