For the Crust:
- 4 boneless, skinless chicken breasts
- 2 large yellow onions, thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp thyme
- 1 cup beef broth
- 1 cup shredded Gruyere cheese
- 1/2 cup shredded mozzarella cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 375Β°F (190Β°C).
- In a large skillet, melt butter with olive oil over medium heat. Add onions, sugar, salt, and pepper. Cook for 20-25 minutes, stirring occasionally, until onions are caramelized.
- Season chicken breasts with salt, pepper, and thyme. Push onions to one side of the skillet and add chicken. Cook for 3-4 minutes per side until lightly browned.
- Pour beef broth over the chicken and onions. Bring to a simmer.
- Sprinkle both cheeses evenly over the chicken and onions. Transfer skillet to the oven and bake for 15-20 minutes until cheese is bubbly and chicken is cooked through.
- Serve hot, spooning the cheesy onion mixture over each chicken breast.
