For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp thyme
  • 1 cup beef broth
  • 1 cup shredded Gruyere cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F (190Β°C).
  2. In a large skillet, melt butter with olive oil over medium heat. Add onions, sugar, salt, and pepper. Cook for 20-25 minutes, stirring occasionally, until onions are caramelized.
  3. Season chicken breasts with salt, pepper, and thyme. Push onions to one side of the skillet and add chicken. Cook for 3-4 minutes per side until lightly browned.
  4. Pour beef broth over the chicken and onions. Bring to a simmer.
  5. Sprinkle both cheeses evenly over the chicken and onions. Transfer skillet to the oven and bake for 15-20 minutes until cheese is bubbly and chicken is cooked through.
  6. Serve hot, spooning the cheesy onion mixture over each chicken breast.
