Cheesy French Onion Potatoes

A comforting and flavorful side dish featuring tender potatoes smothered in caramelized onions and melted cheese.

For the Crust:

  • 4 large russet potatoes, sliced thin
  • 2 large yellow onions, thinly sliced
  • 2 cups shredded Gruyere cheese
  • 1/2 cup beef broth
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.
  2. In a large skillet, heat butter and olive oil over medium heat. Add onions and cook until caramelized (about 15 minutes), stirring occasionally.
  3. Layer half the potato slices in the baking dish. Top with half the caramelized onions and half the cheese. Repeat layers.
  4. Pour beef broth over the layers. Sprinkle with salt, pepper, and thyme.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake another 15 minutes until cheese is bubbly and golden.

Notes

You can customize the seasonings to taste.
