For the Crust:

  • 2 lbs boneless, skinless chicken breasts, cubed
  • 4 cups frozen diced potatoes
  • 1 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 6 slices cooked bacon, crumbled
  • 1/2 cup diced green onions
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F (190Β°C) and lightly grease a 9Γ—13-inch baking dish.
  2. In a large bowl, combine chicken, potatoes, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Spread the mixture evenly into the prepared baking dish.
  4. Bake for 25 minutes or until chicken is cooked through and potatoes are tender.
  5. Remove from oven and sprinkle with cheddar cheese, mozzarella cheese, and crumbled bacon.
  6. Return to oven for 5 minutes or until cheese is melted and bubbly.
  7. Garnish with diced green onions before serving.
