For the Crust:
- 1 lb boneless, skinless chicken breasts
- 1 cup orzo pasta
- 4 cups chicken broth
- 2 cups water
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Add garlic, thyme, and oregano. Cook for 1 minute until fragrant.
- Pour in chicken broth and water. Bring to a boil.
- Add chicken breasts and reduce heat to a simmer. Cook for 15-20 minutes until chicken is cooked through.
- Remove chicken, shred it, and return to the pot.
- Add orzo pasta and cook for 8-10 minutes until tender.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
