Chicken Orzo Soup

A comforting and hearty soup with tender chicken, orzo pasta, and fresh vegetables.

For the Crust:

  • 1 lb boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 2 cups water
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  2. Add garlic, thyme, and oregano. Cook for 1 minute until fragrant.
  3. Pour in chicken broth and water. Bring to a boil.
  4. Add chicken breasts and reduce heat to a simmer. Cook for 15-20 minutes until chicken is cooked through.
  5. Remove chicken, shred it, and return to the pot.
  6. Add orzo pasta and cook for 8-10 minutes until tender.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
