For the Crust:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup water
- 1/3 cup vegetable oil
- 1 tbsp white vinegar
- 2 tsp vanilla extract
- 1/2 cup heavy cream
- 4 oz semi-sweet chocolate chips
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 2 tbsp milk
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Whisk together flour, sugar, cocoa powder, baking soda, and salt in a large bowl.
- Add water, oil, vinegar, and vanilla to dry ingredients. Mix until smooth.
- Fill cupcake liners 2/3 full. Bake for 18-20 minutes. Cool completely.
- For ganache: Heat cream until steaming. Pour over chocolate chips, let sit for 2 minutes, then stir until smooth.
- For frosting: Beat butter until creamy. Gradually add powdered sugar and milk until fluffy.
- Core cooled cupcakes and fill with ganache. Pipe frosting on top.
