- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 large egg

- 1/2 teaspoon almond extract
- Additional granulated sugar for rolling
Instructions
- Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream together the butter and 1 1/2 cups sugar until light and fluffy.
- Beat in the egg, vanilla extract, and almond extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Shape dough into 1-inch balls and roll in additional granulated sugar.
- Place on prepared baking sheets, about 2 inches apart.
- Bake for 8-10 minutes or until edges are lightly golden. Cool on wire racks.
