For the Crust:

  • 1 can refrigerated cinnamon roll dough (8 rolls)
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/4 cup butter, melted
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. Separate cinnamon rolls and press them into the bottom of the prepared pan to form a crust.
  3. In a bowl, beat cream cheese, granulated sugar, and vanilla until smooth. Add egg and mix until combined.
  4. Pour cream cheese mixture over the cinnamon roll crust.
  5. In a small bowl, mix melted butter, brown sugar, and cinnamon. Drizzle over the cheesecake layer.
  6. Bake for 25-30 minutes or until center is set. Cool completely before cutting into bars.
