For the Crust:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons melted butter

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream together softened butter and granulated sugar until light and fluffy. Beat in egg and vanilla.
  4. Gradually mix in the dry ingredients until a dough forms.
  5. Roll out the dough into a rectangle on a floured surface. Brush with melted butter, then sprinkle evenly with brown sugar and cinnamon.
  6. Roll the dough tightly into a log, then slice into 1/2-inch rounds. Place on baking sheets.
  7. Bake for 10-12 minutes until edges are lightly golden. Cool on wire racks.
