For the Crust:
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1/4 cup brown sugar
- 1 tablespoon ground cinnamon
- 2 tablespoons melted butter
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- Cream together softened butter and granulated sugar until light and fluffy. Beat in egg and vanilla.
- Gradually mix in the dry ingredients until a dough forms.
- Roll out the dough into a rectangle on a floured surface. Brush with melted butter, then sprinkle evenly with brown sugar and cinnamon.
- Roll the dough tightly into a log, then slice into 1/2-inch rounds. Place on baking sheets.
- Bake for 10-12 minutes until edges are lightly golden. Cool on wire racks.
