For the Crust:
- 6 slices of bread, cubed
- 4 large eggs
- 1 cup milk
- 2 tbsp granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 2 tbsp cold butter, cubed
- 1/2 tsp ground cinnamon (for streusel)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, whisk together eggs, milk, granulated sugar, vanilla, and 1/2 tsp cinnamon.
- Add bread cubes to the egg mixture and stir until evenly coated. Let sit for 5 minutes.
- In a small bowl, mix flour, brown sugar, 1/2 tsp cinnamon, and cold butter to form the streusel topping.
- Spoon the bread mixture into the muffin cups, then sprinkle with streusel topping.
- Bake for 25-30 minutes or until golden brown. Serve warm.
