Cinnamon Streusel French Toast Cups

Delicious French toast baked in muffin cups with a sweet cinnamon streusel topping.

For the Crust:

  • 6 slices of bread, cubed
  • 4 large eggs
  • 1 cup milk
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 2 tbsp cold butter, cubed
  • 1/2 tsp ground cinnamon (for streusel)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together eggs, milk, granulated sugar, vanilla, and 1/2 tsp cinnamon.
  3. Add bread cubes to the egg mixture and stir until evenly coated. Let sit for 5 minutes.
  4. In a small bowl, mix flour, brown sugar, 1/2 tsp cinnamon, and cold butter to form the streusel topping.
  5. Spoon the bread mixture into the muffin cups, then sprinkle with streusel topping.
  6. Bake for 25-30 minutes or until golden brown. Serve warm.

You can customize the seasonings to taste.
