For the Crust:

  • 1/2 cup coconut flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup shredded coconut (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together coconut flour, baking soda, and salt.
  3. In another bowl, mix melted coconut oil, honey, eggs, and vanilla extract until smooth.
  4. Combine wet and dry ingredients, stirring until a thick dough forms. Fold in shredded coconut if using.
  5. Scoop tablespoon-sized portions of dough onto the baking sheet and flatten slightly.
  6. Bake for 12-15 minutes or until edges are golden. Let cool before serving.
