For the Crust:
- 2 cups fresh or frozen corn kernels
- 1 medium red bell pepper, diced
- 1/2 red onion, finely diced
- 1 jalapeno, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Crust:
- In a large bowl, combine the corn, red bell pepper, red onion, jalapeno, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
- Pour the dressing over the corn mixture and toss gently to combine. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
