For the Crust:

  • 1 lb ground beef
  • 1 lb smoked sausage, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) pinto beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess fat.
  2. Add the sliced sausage, onion, garlic, and bell pepper. Cook until vegetables are softened.
  3. Stir in the kidney beans, pinto beans, corn, diced tomatoes, tomato sauce, and beef broth.
  4. Season with chili powder, cumin, salt, and pepper. Stir well to combine.
  5. Bring the stew to a boil, then reduce heat to low. Simmer for 20-25 minutes, stirring occasionally.
  6. Taste and adjust seasonings as needed. Serve hot.
