For the Crust:
- 1 cup wild rice, uncooked
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 1 cup chopped kale
- 1/2 cup heavy cream (optional)
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Rinse the wild rice under cold water and set aside.
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, sautéing for 5 minutes until softened.
- Add garlic, thyme, and rosemary, cooking for 1 minute until fragrant.
- Pour in vegetable broth, add wild rice and bay leaf. Bring to a boil, then reduce heat and simmer for 30-35 minutes until rice is tender.
- Stir in kale and heavy cream (if using). Simmer for another 5 minutes until kale is wilted.
- Remove bay leaf. Season with salt and pepper to taste before serving.
