For the Crust:
- 1 lb chicken breast, diced
- 6 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until browned, about 5-7 minutes.
- Add onions, carrots, celery, and garlic. Sauté for 5 minutes until vegetables soften.
- Pour in chicken broth and add thyme, rosemary, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes until chicken is cooked through and vegetables are tender.
- Adjust seasoning if needed and serve hot.
