Cranberry Orange Muffins

For the Crust:

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • Zest of 1 orange
  • 1/4 cup fresh orange juice
  • 1 cup fresh cranberries, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F (190Β°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat the egg, then mix in milk, oil, orange zest, and orange juice.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Fold in chopped cranberries.
  5. Divide batter evenly among muffin cups. Bake for 20-25 minutes or until a toothpick comes out clean.
