For the Crust:
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup fresh or frozen cranberries, chopped
- 1 tbsp orange zest
- 1/2 cup orange juice
- 1/2 cup milk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 375Β°F (190Β°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt. Stir in cranberries and orange zest.
- In another bowl, mix orange juice, milk, melted butter, eggs, and vanilla until combined.
- Pour wet ingredients into dry ingredients and stir until just combined; do not overmix.
- Divide batter evenly among muffin cups, filling each about 3/4 full.
- Bake for 18-22 minutes or until a toothpick inserted comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.
