A refreshing and creamy pasta salad with avocado, chicken, and ranch dressing for a perfect summer dish.

For the Crust:
- 8 oz rotini pasta
- 2 cups cooked chicken, shredded
- 1 large avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/2 cup ranch dressing
- 1/4 cup sour cream
- 1 tbsp lime juice
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp fresh cilantro, chopped
Instructions
1. Prepare the Crust:
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the ranch dressing, sour cream, lime juice, garlic powder, salt, and pepper. Mix well.
- Add the cooled pasta, shredded chicken, diced avocado, cherry tomatoes, and red onion to the bowl. Gently toss to coat everything in the dressing.
- Sprinkle with fresh cilantro and refrigerate for at least 30 minutes before serving.
- Stir gently before serving and adjust seasoning if needed.
