A refreshing and creamy pasta salad with avocado, chicken, and ranch dressing for a perfect summer dish.

For the Crust:

  • 8 oz rotini pasta
  • 2 cups cooked chicken, shredded
  • 1 large avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/2 cup ranch dressing
  • 1/4 cup sour cream
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp fresh cilantro, chopped

Instructions

1. Prepare the Crust:

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the ranch dressing, sour cream, lime juice, garlic powder, salt, and pepper. Mix well.
  3. Add the cooled pasta, shredded chicken, diced avocado, cherry tomatoes, and red onion to the bowl. Gently toss to coat everything in the dressing.
  4. Sprinkle with fresh cilantro and refrigerate for at least 30 minutes before serving.
  5. Stir gently before serving and adjust seasoning if needed.

Notes

You can customize the seasonings to taste.
